Webers, Single or Dual?

What is the performance difference of running a single 45 side draft weber than running dual webers?

unless you're building a stroker or turbo/super charging it you'll just flood the motor. those things put out alot of gas believe me it takes time to adjust it for now it's best if you have one. and i'm speaking from past trial and errors.

a pain in the ass to setup.

I ran twin 40s side drafts in my mitsu. Constantly switching throats, emulsion tubes and jets. Two years later, I found a somewhat happy medium where I got mpg, low end back to livable, with a 8% better top speed. I miss that sound though.
Swore then next time round I was going to do a large downdraft but have since moved on to fuel injection which I can't do schitzy about.

Duals are great when they're setup right, but like Amerikim mentioned, it could very well take over a year to get it all "right".
The problem is that there are some 7+ areas of adjustability, on each cylinder, and this can lead to MANY combinations, with one being the good one.

air corrector jets

venturis

accelerator pump jets

accelerator pump bleed-back

accelerator pump springs

Not worth the time, IMO, unless you have lots of it to spend, with stinky-gas fingers too!
Maybe you could find a 3TG somewhere still, they used to be $300 in the improt junkyards.
