I'd say go passive if you're going to be using the stock headunit. You'd have to use a good electronic crossover to control an active setup and it sounds like you want to keep it simple.
Are you happy with the Eurosports? If so keep those, those are pretty decent.
Where do you plan on mounting your amp? If under the seat then that's going to limit yourself from alot of options.
I think sound deadening the front doors and at least one 10" sub is a must for any system worth dropping a little bit of money into.
I reccomend Raammat and Ensolite foam for deadenin/sound proofing.
For an amp, you can look into a nice 5 channel amp to keep everything simple. With your budget I think the Arc Audio 5150XXK is a good choice. For a sub, the Arc Audio 10D4 will work perfect off the sub channel. Then you can bridge the amp and run it passive, or if your passive crossovers allow biwiring you can use the 4 channels to the passive crossovers. This way you'll at least be able to control the gain between the tweeters and mids and you can somewhat tailor it to your liking.
