Toyota calls that sensor the "ECT sensor" for engine coolant temperature sensor. The other posters are correct. That sensor sends a signal to the main computer (ECU) to tell the computer the temperature of the coolant, and hence the engine. The computer adjusts the fuel mixture accordingly. I'm guessing here, based on past experiences, but I believe the default without that sensor is probably a richer than normal mixture, so replace it soon. You should be able to get an aftermarket one for around $30-$40 at just about any auto parts store.
