You are in luck. I just replaced the hood struts on my 1996 Camry this weekend. The dealership around here was charging $75 apiece for each strut. The O'Reilly auto parts near my house was charging $37 apiece, and the strut didn't come with the brackets.
I ended up buying a set of two on ebay for $37 shipped and I was glad I did. The struts came a few days later (with the brackets). Just do a search for "camry hood struts" or similar.
Regarding the ease of installation, I can confirm it was easy. During removal the driver side bracket had an extra piece that was holding a bunch of wires and a connector to it. Removing that turned out to take the most time. The actual strut removal and installation probably took 10 minutes.
Two tips. To pop the strut out of the ball joint, use a screwdriver and pry up the metal piece. Make sure the brackets are oriented the right way, e.g. do one at a time, because there is a driver side and a passenger side bracket.
