I have a '00 Camry 4 cyl. with TRD springs and 17x7 wheels. I currently have 215/50-17 tires, which is close to stock diameter. They look fine to me, although a 225/45-17 will probably look even better (they are wider than the 215 by 10mm and a little bit smaller diameter than stock). Check the tire calculators at some online tire stores to get an idea of the actual diameter you'll get with various widths/sidewal combinations.
I think you should go with the 225 in 17x7 or 17x7.5 rim and +40 offset for the v6 ; 215 is fine for the i4 as far as I'm concerned.
The 17" that I have now ride quite decent - they are not much harsher than the stock 15" and help a lot with cornering.
If you are willing to roll the fenders on the inside a bit, you might be able to sqeeze in 235 width with a close to stock overall diameter with probably +35 offset on 8" rims ... This will look very aggressive and will probably handle very well (at the expense of some decreased fuel economy and increased weight over stock size). Although I have not noticed any decrease in fuel economy by going from stock 205 to 215 size in my case, going from stock to 235 might be noticeable...
