I don't know why they would have to modify the maf sensor. Might have to modify it to fit on another throttle body but thats about the only reason I can see for doing this, I had to get a new 85mm MAF and an adapter when I upgraded from my stock 65mm TB to the Northstar 75.5mm.
Now, upgrading the throttle body on some cars (my GP for instance) is a good mod when the engine is flowing more air than the throttle body can allow in, but it isn't going to be the case on a n/a 3.0 Camry. For one thing you don't have the cams to allow you to make use of all the available bolt on mods, if you were to get some nice mid/top end cams (and the necessary supporting mods like springs and new buckets (shim-less or shim-under style)), up the rev limiter, get some long tube headers and port and polish the intake, then spend hours upon hours tuning for all the extra power you could look at upgrading the throttle body. Until you at least do cams stick to the easy stuff like a cone filter intake
Unfortunately no one I know of just makes cams for a v6 Camry, also no one I know of is willing to spend 800-1000+ dollars on cams, even though thats one of the only ways to up the power output.
Gotta love the OHV engines, 1 cam, its a bitch to swap it out, but man it makes a difference!
