Are you wanting to know what the largest wheel is you can put on the Camry, or are you wanting to know what tire to put on a specific stock wheel?

If you're wanting to know largest wheel, the largest that is generally recommended is 18", but some have gone larger. If you're wanting to know a tire size for a specific stock wheel, we need to know what wheels you have.

Yeah, you can go 18s, but my understanding is that the ride is noticeably worse(i.e. rougher) with 18s than 17s. You'll also pay considerably more for 18" wheels and tires than 17s. Depends on what you're going for. If you want the biggest thing you can get just for the looks, then 18s are probably it. If you care about ride quality and/or economics, you may want to stay with 17s. Also note that the bigger and heavier your wheel/tire package is, the more negatively it affects your performance and mileage.

Also, depending on the specific wheel/tire package, you may have to roll your fenders to avoid rubbing.

When going to an 18" wheel for the Camry, Tirerack.com generally recommends a 215/45/18 tire.
