Those estimates are pretty good. Not too sure about the labor part though...I think that a shop may charge more than that since it's a decent bit of work even though it's fairly straight forward.
parts sound about right though

the cost will fluctuate depending on what clutch/flywheel set up you go with.
as for down-time- I'd give a shop about a week or so. But very sorry....there are very little big performance shops in TO that would be willing to swap a camry tranny for a decent price I would think, since they have no experience in it and would more than likely charge a lot just in case it takes them a long time.
you should try smaller shops- maybe around the markham road area? just stop by, stick your head in and ask.
but the only thing that I would say is what a lot of ppl would say...why not just pick up a 92 5-speed v6 in the first place? if you have the gen3 1mz, then I could see the point of swapping since a 5-speed was never made. same deal if your car has been heavily modified aesthetically.
you'll end up saving a lot of money in the end and have the same thing. you can swap over whatever it is that you'd want to keep as well.
