General handbrake adjusting:

Handbrake off and take the rear wheels off ( i don't need to tell you you need the rear off the ground with the front wheels chocked). There should be a little hole in the hub and a small gear inside. You turn that down and it clicks. You can either:
> turn it until it grabs a fair bit and then spin it back the other way 8 notches. Will help if you get a scriber to lift the metal tab that goes over the gear and makes the 'click' sound, otherwise you might chew up the teeth on the gear with the screwdriver that's turning it
> let it grab a little(more than a slight grab) and then back it off 3 notches.

Once the pads are set properly you may need to adjust the cable. To do this, you need to remove the centre console. Then near the handbrake lever, you should see the cable and 2 nuts at the end of it. Undo the top one which is the locknut and adjust as necessary. Set it so the lever stops after 5 clicks.

IIRC, the emergency brake is self-adjusting -- just give it a few yanks. If it's really bad, then Jimnist gave the procedure...

Did not know that - learn something every day - will give it a try.

A long. long, long, long time ago - I had a Ford - and was told the rear drum brakes coulds adjust by driving backwards and then braking hard. Don't know if this was true.

sc2dave - I wrote a DIY procedure to replace the parking brake cables that includes instructions with photos on how to adjust the rear star wheels and remove the center console to get at the parking brake cable adjustment nut. Take a look, I think you will find the photos helpful.

DIY: GEN3 2.2L Parking Brake Cable Replacement Procedure

I can't help you with struts. Haven't done those yet.
