Seem to have an issue at times whereby, when I hit the accelerator it seems like there's not a lot of power, and it t akes a while to gain speed, and others, it kicks in and I accelerate quite rapidly. Didn't notice this happen on my old engine, or if it did it was pronounced like this one is. Any ideas what to look for? or what the issue could be?
Engine is the a V6 in a '92, approx 40.000km on the engine. MAF sensor has been adjusted, as is the transmission kick down cable, and has an open air filter as well.

Do you mean sometimes it shifts down and other times it doesn't?
Or do you mean it shifts down but has not get up and go?

Shifting seems to be fine as far as I can tell, and shifts fast and smooth after playing with it a bit. Just sometimes it has the 'get up and go' as you say, and just wants to move, and sometimes it just feels kinda limp.

when's the last time you got a tune up? also could be a vacuum leak on one of your hoses. i noticed the skinny hose going from one side of TB to the other was leaking air, and after I fixed that my car stopped stalling and hesitating.
with your engine on, open your hood and listen for leaking air.
Will check the hoses carefully, although I don't seem to be showing there's a vacume leak at all. Car was tuned up when the engine went in several weeks back so that shouldn't be an issue. The fuel components are fine as far as I know. I did have the thought of the fuel pump and if it maybe isn't pumping enough gas to the engine? Fuel filter was changed about 6mths ago so would think that shouldn't be an issue at all.
Car ran fine today, but did notice when the air conditioner is on though there's a very noticeable decrease in 'ommph' when it's on. I know it doesn't exactly explain why it does it sometimes when the AC is off, but maybe somehow connected?
as far as the AC not really. its simply puts more of a load on the motor so any lack of power would just be more notocable with teh AC on.
does this power loss happed at any specific RPM? does it happen in a certain gear?
just trying to narrow dpown what could be causing it. fuel or electrical are prolly it but within thoes it could be a handfull of things.
When it happens, it is most noticeable, to me anyways, when I'm doing about 80km/h range. If I try to speed up, I seem to move in slow motion gaining speed. I don't notice it as much if I'm speeding up from a low speed though. I usually leave the ECT on, but can play with it and see if it has any effect.
Well, interestingly did some seeing what I could od to reproduce it, and every timeI had the AC on I could. As well, I noticed this morning that if I turned on the AC while idling I would lose some of my vacume pressure, but not if it was turned off. It makes me wonder if there's at all, any vacume hoses that are used when the AC is on, but not when it's off? or is it just a coinicidence?
Basically yes. Remove the old air box, direct the air flow intake to the open air filter. Picking up a proper MAF adapter this afternoon, and still need to make a surround for it to help keep out some of the engine heat. Did the same to my cherokee when I had it. Eventually will change the air intake to it but don't feel like messing around with the bumper/fender right now. Will probably do it the same time I get to doing the front lip.
Thats probably whats causing the loss of power, the exact same thing happens to me and it started after i made my air filter open...the reason it doesnt happen with the proper intake is because they actually have air reservoirs if that makes any sense...but yea since the air in the engine bay can be A) turbulent and B) hotter than usual... an open air intake would cause the exact same loss of power you're describing.
