For the front:
-Headlights
-Bumper with chrome grille
-Wiring modifications to make the headlights work
You can do this for not too much money. The '00-01' headlights have little better illumination, so there's a functional benefit.
For the rear
- Trunk
- Bumper
- Taillights
- wiring modification so the inside brake lights light up.
Needless to say, the rear will cost you a lot more.
The power seats from the Lexus ES300 will probably bolt on, but a lot of the later Camrys came with power seats. Mine did. The LE model with power seats has a power driver's seat. The XLE models have power driver & passenger seats.
If the wiring is not there, custom wiring work would be needed, but it shouldn't be too difficult.
One thing about power seats. If you share the car with a spouse, significant other or a family member, they are nice to have. If you are the only driver of the car, don't bother.
On climate controls.
On '00-01 CE and LE models, the only difference is that the RECIRC lever is a button.
On '00-'01 XLE models, automatic climate control is standard. If you are really technically competent, you can do this, but I would not bother. It's not just a matter of changing the controls, but there's sensors wiring and other details you would need to deal with.
There's a lot of small things you can do that won't cost you much money to do. Here's what I did to mine.
I changed many of the bulbs to white LEDs.
It's not the real stuff, but I put carbon fiber trim (it's carbon fiber look tape) on the black trim.
I took apart the shifter and painted the button metallic silver also.
I hated the inside door handles on these cars as they were the same grey plastic. So I shot 4 coats of metallic silver paint on every handle. It's not chrome, but it's a lot better than stock.
I installed the overhead console from a 1st gen Tundra. Now I have maplights. These are also wired to come on with the doors. If you look closely, you'll notice I have auto-dimming mirror with a compass.
