I know with the V6's that use the AFM (yes AFM, not MAF) you can trick it by cutting the top of it and moving the cog inside to adjust a/f mixture.

There are different types of things people call chips. What you are talking about is a mod that can be simply done, and you often see people selling the parts to do it on eBay, saying it adds 50hp and calling it a chip. That's a joke.
A buddy of mine and myself have been building up a 92 Eagle Talon (Turbo AWD). It has what I would call a "real" chip. You pull the main chip (in this case, the EPROM chip) out of the ECU and replace it with another. The new chip can be programmed via special software running on a laptop. They include a special cable that plugs into your OBD-I type diagnostic port. In addition to tuning it also has complete data-logging abilities. It's really quite impressive. I have not yet learned how to use it to it's full ability yet. Serious tuning is far from easy, although it seems that it can be learned by anyone that is willing to make the effort.
The system we use is called ECM Link (formerly DSM Link), and can only be used with DSMs. It is not cheap although it is not nearly as expensive as some other systems out there.
