-Wiring-
-On the car-
I would take the obvious route and try to follow the wires(If they are easy to follow). That, or turn the switch on and see which wire is getting 12v(Hope you have an voltmeter, otherwise you get to lick your finger and grab 'em! hahaha).
-On the projector-
The wire going directly from the h3 bulb is positive. The wire that is attached to the housing is the ground.
I can never find a spade connector that matches(Even for the same gauge wire they always seem to be different sizes for different manufacturers), so I usually end up cutting both of them off and using a new matching pair.
If the h3 has a male spade on it maybe go to the store and see if you can find a female that will fit it snug, so that way you only have to install one connector(to the car's original wire).
-About the brackets-
Usually the threads are on the projector housing itself, so if the brackets are rusted it doesn't matter. If the threads are on the bracket, try shooting some WD40 in there and threading the bolt in by hand(I'm assuming you have the correct bolt). If it goes in nicely, obviously no problem!!! If not, try using a wrench and not too much pressure(No gorilla stuff! Pretend you are a mouse! Those bolts are small and fragile haha). If it seems like its a no-go, the only way to fix it is to run a tap through it. At that point you would have to take the bolt to the hardware store and find out what size thread it is using and hope they have a tap in stock.
I have had so many problems with dumb aftermarket foglights on our race cars to know that they suck. Haha.
