I am a seasoned tech and still do this on complex jobs....
Get you a notebook, ziplock bags, and a digital camera. Take pictures of everything, especially vacuum tubes! If you dont know the name of the part, place a label on the tube, "A" for example, and then make another "A" label and put it on the item.
I recently did a v6 motor swap on a 4Runner. There were vacuum lines every where. The pics that you take can be printed at Kinkos on a color laser printer really cheap. It is great when you are putting it back together if every wire is routed the same as it was from the factory.
I always start off with Item one in my notebook of "Removed Air Cleaner". Then I put all the hardware in a zip lock bag labeled "1". I usually end up with over 100 line items on my note book, but it sure makes it go back together quick and easy!
