I filled up at a station close to the highway when I was about 35 miles from home.
I set the cruise control on 60mph and the hwy was fairly flat for that stretch.
My mpg read 43 when I got to the exit for home.

Sounds reasonable. I can go about 30 miles at 65 mph with some hills and get my trip computer to touch 38 mpg. Of course, that 38 mpg is optimistic as my actual mpg averages 1.51 mpg less.

Lucky you I can never seem to keep myself from leaning on the gas, even when I set the cruise control. I think my I4 gets bad mileage because of my driving...

There are times when i'd like to try that but here in California there are two flows of traffic, bumper-to-bumper or haulin' azz. If i tried that on the freeway folks would be passing me like i was in reverse. Its a great idea though, cause not only do you keep the revs down at that speed but wind resistance to the car is much less - so you are going to get maximum mpg just as you say. If you can do it and have the time, why not, its a good plan.
