Academic fundamental question...

for the 2005 camry doing mostly 85% highway miles driving pattern, which is the best struts to buy and install? Monroe sensa-trac, or KYB GR-2? Also, if i install the KYB GR-2 struts, which would be the best coil springs to use? OEM stock, or can i get a better spring, stronger, for a better high quality cadillac type ride.

i think both are pretty much equivalent to stock.. and since its hwy driving, it doesnt matter too much since u wont be hitting bumps often.. but i would go KYB

I bought a set of monroe sensa-trac far my 89 cutlass ciera one time.They suck.Floaty as hell.Only got tight when i would jump the car and land hard.KYB for sure.A set of SE springs would give you a less floaty ride but would feel less like the cadillac ride youre after.

Will SE springs fit the XLE? (2002 XLE in my case, was thinking if 2002 SE springs will fit? and also SE struts)

I think so,and they fix the floaty ride.

Given the options you supplied I would go with KYB.

Personally, I wouldn't buy either one though.

I don't really understand what you are looking for in a spring. The information you provided seems to contradict itself.
