A couple of answers I think I can supply:

Generally, we're talking here about removing the cloth, and replacing it with leather.

Figure $400 - $500 for a whole interior, at least. Work involves the following:
1. Removing all the seats from the car.
2. Taking off the cloth covers -- clips around the bottom of the seat, and hog rings holding most of the seams down, like the one running down the middle of the seat, between that area and the bolsters, and so on.
3. Same kind of thing for the door panels -- taking out the cloth-covered panels, removing the cloth, etc.
4. Then there's installing the leather -- hog rings for the seams again, and then "gosh knows" how the aftermarket stuff will be attached to the seat. Presumably using hog rings wherever the installer can, as opposed to the OEM stuff with the clips that fit into the seat frame.
5. Then reinstall all of the seats back into the car. MAKE SURE they use two people to remove and reinstall the seats -- if they do it with one guy, they're amateurs, and they'll probably scratch the living hell out of your interior. The rear seat isn't that big of a deal, but the driver seat, presuming you've got a "powered" one, is a heavy bugger. The passenger seat would be just a bit lighter.
Think of "an hour per seat," and "a hundred bucks per hour." With the back seat counting as two seats. Of course, that's just a ballpark figure, but it's not safe to presume it'll be a whole lot less than this!
