My daughter drives about 2 miles to work. Whenever she gets back into the car, after work, her inside windows are covered in Ice. Before the winter weather came, the inside windows would be fogged up after work.
We keep it in a dry garage, so we know she's not bringing in snow or rain when she gets in.
Has anyone else seen this problem, or what may be causing this?

Warmer air inside the car condensates when it comes into contact with the cold winshield. Basic physics i think.
Try running the car with the A/C or defrost on. Either or will remove moisture from the air inside the car and prevent this occurence.
Also check the Cabin Air Filter, a dirty or clogged cabin filter can cause foggy windows.

She manages to get it cleared out as the car warms. The windows are clear when she gets out, But why is it icy when she gets back to it after it as been parked?
I will check the cabin filter.

Another thing, does she normally keep the ac controls on "recirculate" mode? If so, Try changing it to "fresh air" mode before parking the car.

The cabin air filter looks new.
She keeps it on defrost, she usually has the air button and defrost both pressed. It looks to me like you can't have the recirculate button on while the defrost button is pressed.
I took it for a 2 mile drive and am going to leave it outside and see if it happens for me.

Rather than keeping it on defrost, Once the windows are clear, turn the A/C on in the fresh air mode, but keep the temp dial all the way hot.

what are the temperature readings from where you live? its around zero degrees fahrenheit today and there wasn't any ice on the windows. are the window trims in good condition? any cracks or tears? try wiping the windows clear next time and see if it continues to collect ice
I have the same Issue on my XLE. Windows are all fogged up when I come out to my car after work at night. Only had the ice issue happen to me once.
I did have a water leak when I first purchased the car. The factory failed to connect the sunroof drain. I have also seen moisture on the INSIDE of the rear brake lights. Not sure if this is indication that I may have another leak somewhere.

You can think of the AC as a dehumidifier. I leave it on all the time. You can leave the temperature dial at the midway mark unless you like it really hot.
This is what I learned in high school chemistry. Hot air holds more water than cool air. When you're in the car with the heater on, your breathing will leave moisture in the air. When you park the car outside, as the windows cool, the moisture will condense on the windows. If it's cold enough, the condense water will turn to ice.
