At over 65 MPH, the steering wheel starts to rattle and vibrate, when i grab it tight with my hands the sounds dissipate somewhat, but as soon as i let it go the rattle, vibration becomes more pronounced. Sounds like loose ball bearings, rattling, vibration, and shaking. Any idea what this truly is do to?

Concentrate on the shaking first. It sounds more like tire balance than anything else. The first step is to inspect the wheels and tires, then check balance.
