I am getting around 15 -16.5 miles per gallon(80% city and 20% highway) on my Camry 08 V6. This number seems a little low compared to the 20 range I am hearing from other people with their Camry V6s 07-08(and they are usually driving 80% city and 20% highway). After I get a full tank, I reset the trip odometer and whenever my tank almost empties out, I just grab that number from the trip odometer and divide by 18(the capacity of the gas tank). Normally my odometer reads 270-300, and after a 400 mile road-trip and a little city driving, it reads 350, the best I have seen so far(most of the tank was used on the highway however).
Am I doing any calculation errors or processing errors, or is there something wrong with the car? If you can provide me your mileage numbers and trip odometer readings, that would be great, including any help as well! Thanks.
FYI--I am not a speed racer, in fact, I try to "eco-drive" whenever possible. I am kind to the gas when driving, which is why my gas mileage concerns me

You don't divide by 18. You divide by the amount of fuel that you've used.
Ah, well that makes sense, can't believe I actually made a simple mistake like that. So do you calculate the mpg when the gas gauge reached where you left off the last time you added gas?

1) Fill car
2) Reset trip odometer
3) Drive car
4) Fill with fuel
5) Divide miles driven (trip odometer reading) by the gallons added to fill the tank.
Example: If I drove my car 400 miles since the last fill up of fuel and it took 15 gallons to fill the car after driving that 400 miles my fuel mileage would be 26.67 MPG.

400 divided by 15 = 26.6666666

TRD VVTI's description of the steps to calculate gas mileage is dead on, with the exception of what TTM77 said. Divide the mileage driven since last fill-up by the number of gallons you filled up with.
There are slight differences in how different gas stations and pumps calculate the amount of fuel dispensed, but those differences should/would only make a small difference in your calculated gas mileage.
