I thought I read in the manual of my '09 that the trunk release on the key wouldn't work when you have the trunk lock cylinder in the valet position. Haven't tested this yet though and the car isn't here to check the manual again.

Wrong...better bone up on your reading or thinking.
My key lock has always been horizontal so that if the car is broken into, the trunk isn't accessible with the lever release.

I only do it IF I have something of value in the trunk. They can have the spare and trunk mat most of the time since that's all that's there. What do you keep in there?

It actually depends on the model that you have. On models with the Smartkey, if you have the lock cylinder in "valet position", the only way to open the trunk is with the actual mechanical key. The button on the keyfob and the sensor pad/switch itself will not open the trunk.
