None of my local dealers have any SE models in stock. What's my best bet for a 2010 V6 SE Camry? I'm particular about color and interior, but flexible on other options. If I have one of the dealers order one, should I expect to pay sticker price?

Order one.
Don't pay sticker price unless you are certifiable.
Just order one with all the options you like, that way you are happy. There is a shortage of these models (se v6) in Canada for sure, not sure about the U.S.
But I ordered mine end of july and should expect it sometime in september. It's a factory order, so they still have to build it. Hopefully it's not built on a friday lol.
I am sure it is worth the wait
good luck with your search
Order it. I ordered my 2010 SE V6 a few weeks ago. Everything but navi for 30,252 OTD. 27,671 before tax, thats 100 over invoice. I take delivery in about 1 month.

Congrats blackcamse, 30 000, I paid 35000 canadian on the road (with all taxes and fees) 2010 Se v6 that's after months of arguing with the dealer hahahha, it works out to about 2.7 % profit i gave them ($700 Cad)
Can't wait for it. Wish I we in Canada didn't have to get raped all the time with auto prices.
So much cheaper in the U.S
Oh well.
