Parts may be more expensive in Canada. In the US the rear struts are about $90 USD each plus shipping. The fronts are about $70 USD each. Therefore all four struts are about $320 USD+shipping.
The Monroes have a lifetime warranty and $50/axle credit to remove them if not satisfied with the ride ("Safe and Sound" guarantee in the US, not sure abut Canada). KYB does not warranty against normal wear. Monroe gives $50 axle to install/remove, so $100/axle may be more "reasonable".

I'd recommend getting new struts mounts (front $50 USD each with new bearing, rear $38 USD each). The rears can usually be reused, but if the assemblies are taken apart, I'd change the rear mounts.
Get a four-wheel alignment after that for about $70 USD.
So in any case the shop is taking her for a ride.

That sounds ridiculously high priced. I have not looked into it yet, but are the struts that pricey ? I mean, it's an easy job, what gives ? are they trying to hose her ?
