I have a Camry XLE 2011. I just bought an iPod Touch latest generation. I can pair it up
with the audio system under Bluetooth, but I can't control the iPod from the audio system
other than pause/resume a song. I see BT Audio on the audio system screen and I can hear the
music.
I can't select tracks, see any text, etc.
Any ideas?

you cant slect tracks via bluetooth nor AUX, you can only do it with an aftermarket stero with USB

some 2011 camrys come with the Deluxe Stereo, Bluetooth, USB, and AUX
check in the cubby directly in front of the shifter (flash light helps) there should be a input for USB in there next to the aux input, sometimes it is covered with a rubber flap, if the USB is there then use that instead it will allow you to see tracklisting, playlist and all the other things you want to do.
if you don't have the USB in there and if your radio has a SAT button you can get something like this, only drawback is that you can't run SAT radio and iPod only one or the other

when I bought my GEN 5.5 it didn't have any of the stuff I wanted built in and it was so expensive to add on and it didn't even look as nice as the factory stuff.
my truck i had before the camry didn't have all that I wanted in it either
i bought this and it works flawlessly with mine. i have the 07 camry with jbl. it was a quick and easy install and it has the ability to add on with sat radio too but you have to buy the add-on.
What you're seeing is a limitation of the BT within the iPod itself not your system. I have an iPhone 3GS and it drove me nuts that I can't do what other BT phones can do... thanks to Steve Jobs. The newest 4.2 update (not sure if it's for the iPod too) fixes some of it, or if you're jailbroken there's an app called Music Controls that enables the next/previous selection to work with the BT... still just says Streaming Audio on your radio screen but you're not stuck listening to the current track.
