I have since figured out the plugs. You are correct, the plug withthe many wires is the main plug, the next one with the three wires is the steering wheel controls and the empty one is the CD changer, which I wasn't aware my factory head unit could control at the time I wrote that.
Sorry I don't have the pin out for the changer plug, but removing the radio is very easy.
Start by removing the climate control panel using a trim removal tool or if you are careful, a flat head screw driver. The climate controls are only held in with clips that pop straight out. There are two wiring harnesses that plug into the climate controls (at least on my car, I have no security light like some do). YOu can unplug those harnesses if you want so its not dangling there. Just above where the climate control panel was, you can pull around the bottom of the two vents to pop out the trim section around the stereo, also held in with just clips. One wiring harness on that piece for the clock and passenger airbag and seat belt indicators. Once that panel is removed you should have clear access to the head unit. For bolts (10mm) hold the head unit in place, remove those and the unit pulls straight out. Mine had two wiring harnesses and two antenna cables as you can see in the pictures above.
