Replacing the head

Hi all,

To fix my engine problem we are going to change the head and rocket of my camry with a recon'd one that a mate has.

Anyways my question isn't what i need to do :P i could search very quickly for that. My question is what should i do when it is off? What parts could i replace that would be a good idea at the time? I have a new carby to bolt on to it, but i have to take off both manifolds. Should i clean them? and if so what with?

I'd rather fix this problem more importantly as the car should terrible when i drive, but i'd also like to get some more performance outta the engine if i could.
