hmmm...

So my car all the sudden idles like crap, it sits at 500 rpms when warmed up and bounces up and down up and down about one beat per second. My wideband O2 is pegged rich all the time and I can smell unburnt gas. My guess is a cylinder that is not firing due to fouled spark plug or an injector is stuck open. Any other guesses?

well - throw in some new spark plugs - only takes a little bit on the 5s and see what is up... have you tried that yet?

Checked plugs they are fine, upon closer inspection I found that the vac line to the MAP sensor had popped off due to the increased vibration from my poly motor mounts and deleted engine balancer. Zip tip fixed all, wideband reads normal and engine idles smooth as can be at a steady 500rpms.

Just a suggestion... I had the same problem on my old '91 4-cyl Camry and on my current '95 4-cyl. In both cases, cleaning the IAC valve took care of the low idle speed. Doesn't necessarily mean that it's your case as well, but it's something worth looking into for sure.
