I can tell you with a great deal of certainty that adding brake fluid will solve this problem. When you press the brake pedal, brake fluid travel down to the pistons to clamp down the brake pads. The volume of fluid necessary to do this is inversely proportionate to the thickness of your brake pads.
When you check your brake fluids, probably the brake pedal is not depressed. That is why the level is within spec at that moment. But when the brake fluid leaves the tank when you press the brake hard, it triggers the low levels sensor.
This is an omen that you have brake pads which may need changing soon.
