Most dealers (in my area anyway) don't do this work themselves, they send it out to an outside shop. Unless you are going to pay the big bucks to have it wrapped in OEM leather (big-big-big bucks).
You can save the markup the dealer would charge by going to the aftermarket shop yourself. Depending on where you live, there may be just a few shops to choose from, or like the Milwaukee area, which has many.
In my area, most shops that put in aftermarket sunroofs, pinstripes, tinting, ect..... will put in leather as well. How much it will cost will definately depend on what you want (in terms of quality). You can have just the front of the seats covered in leather, you can have custom embroidery, and a million different options. Do your homework, and then sit down with someone from the shop to decide what you want, and what you can afford.
It will cost anywhere from $600 for a cheap job, to about a grand for a half decent job, and then the sky is the limit if you want a fully custom, embroidered with cursive lettering, bling-bling, two-tone extraviganza.
Keep in mind that if you buy the cheapo $600 leather, it probably won't be the same quality as the more expensive stuff. It won't hold up as well, and might be more prone to cracking, discoloration, ect...
I only know this because my sister looked into buying a Civic EX with leather, and the dealer was nice enough to explain how dealers put leather in cars that don't come with it. He told her it would cost about $1000, which he freely told her was a rip off. She bought a Integra instead, which came with leather standard.
