Question repair times

Where can I find estimated labor times online for common repair jobs (like CV joints or a ring gear) for a 1990 Camry?

You can't. Mechanics have a variety of skill levels. An ASE Master Tech can theoretically get stuff done in half the time of a Journeyman.

Count on being charged for an hour of labor on each CV joint/axel.

Call your local automotive department store (i.e. Sears) and ask what the "flag rate" is on that job. Flag rate refers to the maximum time to complete a job. The tech gets paid the flag rate even though they may finish the job early. Good techs can make good money. If a tech can complete a job thats flagged for 6 hours in 2 hours, they can move onto the next job and still get paid for 6 hours on the previous job even though they only completed it in 2 hours.

By the way, call around on your CV. There are driveline specialty shops that are usually pretty affordable. I had both CVs replaced on my Honda a couple years ago for less than $300 parts & labor.
