You don't specify the year of your car so we can't tell whether it is OBD1 or OBD2. If your car is 96 or newer, it is OBD2. If the check engine light comes back on do as skewe suggested and take it to Autozone to have the code read. If it is 96 or newer the code is probably still in it's OBD2 memory. Take it to Autozone anyway and have it read. No reason to guess what caused it.
In addition, cars do not comsume coolant. If you were low you have a leak somewhere. It is best to have it looked at by someone who can pressure test the system or use a dye to find the leak. In the mean time keep checking the coolant level while the engine is cold and top off as necessary with a 50/50 mix of antifreeze and water. You do not want to overheat the engine. Today's engines with aluminum cylinder heads do not take too well to overheating.
