I have Pioneer Premier 400 watt subs on a JL Audio e1800D Amp that goes 800 watts (all in 2 ohms). I'm wondering if would it be wrong finding some more subs that overpower the amp just a little bit? Any1's opinion would be nice, yet I haven't decided what I'm going to get, but I'm still keeping the same Amp.

Not quite sure what you mean by subs that "overpower the amp"(?) but if you mean subs that have a higher rms rating than the amp puts out, you will be fine as long as everything is set-up properly.
yeah yeah thats exactly what I mean!!! So can I put (2) 12W7v3 subs on the amp I already have, and everything still going to be on 2 ohms?
Not quite that simple! The "load" the amp "sees" is determined by the final impedance of the voice coil(s) of the sub(s) (final impedance is determined by how many coils and how they are wired). JL 12W7's have a single 3 ohm voice coil so in parallel a pair would present a 1.5 ohm load and in series a pair would present a 6 ohm load.
The w6v2's only come in dual 4 ohm coils so the loads you could get with a pair are 16 ohm, 4 ohm or 1 ohm. 16 ohm or 4 ohm won't get the full potential from your amp and 1 ohm won't work since your amp is not stable that low.
I just looked at the specs of your amp and the ratings you listed are at 12.5 volts (engine off). It actually does 1000 watts rms at 2 ohms/14.4 volts (engine running but may not quite get that high depending on your alternator). IMO a single 12W7 would be a great choice for that amp. Since it is a single 3 ohm coil you'd get in the neighborhood of 800 watts which would seriously rock that sub!
1) Stereo Integrity 12" BM D4 do a Parallel on your amp.
or
1) 12inch IDMAX do a Parallel on your amp.
or
1) soundsplinter RL-p12D4 do a Parallel on your amp
or
2) alpine SWR-1222D do a Series / Parallel on your amp
you dont need to get 2 subs. too bad your amp cant do 1ohms.
One W7 will rock harder then most pair subs.
IMO spends the money on one W7
YOU WILLL BE HAPPY on HOW HARD that will HIT.
800 watts is the perfect wattage for sound qalutiy and dependalbity for the W7.
Just listen to the W7 and you will want it.

My kinda guy!
BTW, your amp is easily capable of powering multiple subs depending on the voice coil configuration/power requirements of said subs. It's just not flexible enough to power multiple W6's or W7's to their full potential
