1 Video-Out with 2 Monitors

If I got a in-dash DVD player with 1 output, would the video or audio quality diminish if I bought a splitter and split it out to 2 headrest monitors?

well, you wouldn't be splitting the audio, since it should be going to your sound system, but yes, technically by splitting the video signal it will diminsh a bit.

but if you buy high quality y-splitters, the difference can be just about negligible

The 2 monitors I have to be put into my headrest also has a built in speaker. Probably won't end up using it but was wondering if the quality would have gone down if I did. That's not a big problem. The think I'm worried about is the video. What's some good high-quality Y-splitters? And when you say negligible, how close are we talking? Close enough that most people won't even notice the difference? Or most people would notice the difference but still pretty good quality?

Don't just simply get some Y-splitter, what you need is a video amplifier/splitter. Video bandwidth is very demanding, and any sharing will results in noticeable loss. Use good quality, shielded video cables too.
