Don't be so sure leather is easier to maintain for a toddler. A lot depends on the quality and thickness of the leather. Though spills may clean up easier if you get to them quickly, even factory leather can get scuffed, scraped and the indentations from a carseat tend to look worse than cloth, as was the case with the minivan I recently traded on a Highlander. Leather will still stain if some colored drink sits unnoticed on the material for a while, too. Also, some Highlanders have "Yes Essentials" cloth interior that is supposed to be more resistant to stains and such.
Finally, with aftermarket covers, make sure they don't interfere with the seat-mounted side impact airbags for the front seats. The back seats have only side curtain airbags which would not be affected by a seat cover.
