There are tons of good lighter trails in Mt. Hood National Forest too. But Tillamook state park (browns camp, etc) is a great place to start.

If you want to play in the sand hit the dunes in Florence or Coos Bay. Head east over Mt Hood for desert fun. Still a buttload of snow up on Mt Hood as well.
