Depends.. a lot of the AE86 guys I know usually go with the 195/50-15 tires on their wheels when they're 7 or 8 inch wide. Offset has to be low though, most of them go with 0 (zero) offset wheels to get them to fit right.
like what most people suggested, you can go with either 195/50s or 205/50s. but before i go on seconding their opinion, there are other things you need to look into. for example, if you plan on going with 205s and later lowering your car, you have to make sure there is enough clearance space to prevent rubbing during turns and suspension travel. the other thing is more cosmetic, like how much the 15 inch wheels fill up the wheel well. if you plan on lowering the car a lot, going with 195 or 205/ but 45 profile tires will give the car a really nice look.
if you want the racing look, go with side profiles 50 or less. 55 will look a bit chunky unless you don't mind it. the setup i have on my 87 corolla sedan (AE83) are 195/50/15s and i had my springs cut (i couldn't find any suspension parts) about 2-3 inches. it really looks good but i do scrape over high bumps.

I haven't brought any tires yet. Lowering springs(1.8 drop) just came now just waiting for the stocks/struts.
205/50/15 on a 7" wide wheel, zero offset will be REALLY tight. Prepare to do a bit of wheel arch bending and/or cutting. The performance is WELL worth it however. And because 205/50/15 is an extremely common size (Honda camp), tires are readily available and cheap(er).
If you're worried about clearance and rubbing, stick with +ve offset wheels and 195/50/15. And don't lower too much.
