Sounds like brake fade or warped rotors.

You said you got the brakes and rotors replaced?? You should take it back to the shop and ask them to test drive and see the issue.

Do you have your alignment and wheel balancing done??

The rotors are new? You may need to take them back off and have a shop turn them...or at least check to see if there's thickness variation on the rotor (which could cause that pulsation feeling). Alignment and wheel balance should not contribute, but anything is possible. I'd most definitely start with the rotors before spending money elsewhere.

I'd have the rotors turned. Brake shudder is normally not attributed to anything but thickness variation of the rotors (commonly mistakenly called "warped rotors").

Any chance you got grease or brake fluid on the pads?
