As long as you are talking about the under dash lamps and wiring them into a separate circuit on the fuse box, should be little to low risk to the rest of the electricals. If something should happen, it will just blow that fuse. Cutting and splicing the OEM wiring is always more risky that implementing a separate circuit. Lot of the OEM wiring is interconnected, making it sometimes tough to diagnose if something goes wrong. Also use proper wiring practices - seal all splices, use proper wire strippers, solder where possible, use internally coated heat shrink tubing for water tight seals, add cable support/strain relief where necessary, etc. Fortunately, most of this info can be researched online.
Now wiring them to come on with the doors - there are a couple of options. Not hard to wire up, but will require splicing into the existing wiring (dicey situation if you haven't done this before) or add a second momentary switch or separate switch just for the under dash lighting (drilling holes, run wiring, etc.) is less risky, but requires more work.
Most important tip - disconnect the negative battery terminal before you touch any wiring. Most common mistake I see is people cutting and splicing wiring when the battery is still hooked up. Only takes one hot wire to be shorted to ground to blow a fuse, or worse, burn up the wiring somewhere else, making that much harder to diagnose.
