Today I purchased a new thermostat, gasket and coolant from my local Toyota dealership. While I was looking at the FSM it says that you need to replaced the O-Ring on the Water Inlet Pipe. On the dealer's parts website they don't even have a o-ring listed under the cooling->water inlet section.
Well, I finally found it on their website(it was listed in the wrong section). Would it be okay to use the original o-ring?
Go ahead and reuse, but keep a close eye on that area for leaks after all the disturbed parts are back together and running.
I like to put Syl-Glide on all my orings and seals when reassembling.

I managed to replace the thermostat without disconnecting the inlet pipe from the housing. Finally my cooling problem and fixed, and MPG will go back to normal.
Great, now my power steering pump is leaking. Would it be better to change it, or buy the seal kit from Toyota. It seemed to work fine, but there is a faint whine, (when turning wheel in both directions, seems normal) at idle. Any suggestions
Hmm, I should check the fluid level on mine. Now that the mornings have gotten colder, I'm getting a bit of a whine when I'm turning/backing off the driveway.

^I have a whine also, but it has been doing that for as long as I can remember. I'm pretty sure its normal.
So, in auto tech today I determined that the power steering pump is actually leaking and the rear valve cover gasket is seeping also. I am going to get the seal kit and try to rebuild the pump.
When doing that, check the shaft on P/S PUMP. Make sure you use a factory kit; part number 04446-06040 and the shaft number is 44312-06010. kIT IS $32.48 MSRP and the shaft is $16.83 MSRP.
Good luck.
p.s. Can't believe you bought elswhere
