I think that's the difference in ride quality. I'd suggest going with 245/35-20 size tires next time. The difference in sidewall height is noticeable and better suited to the weight of the car.
Also, I've taken another look at the pictures.
It actually looks like those are the 20x8.5" wheels with the 25mm offset and not the 40mm offset.
I say that because those wheels look unusually far out of the wheelwell. If that's true, then only the 225mm width tire
might fit and you'll definitely need to have the outer fenderlips rolled just as you're doing...
As an example of a wheel similar to yours, there are several Avalons in my area riding on the KMC Dime in the 20x8.5" size with a 38mm offset and 245/35-20 size tires. No rubbing whatsoever - no matter how many people are riding in the car. And no fender modifications needed.
Do you recall what offset they are?
