One guy around here did. I would like to as well, but I haven't ventured that far.

I've purchase a use center consol and I have started to modify it, I'm trying to keep the radio cover. There is a good chance that the very bottom of the double din might be tucked under and behind the lower curve of the center consol but not by much.

My biggest question is do you loose control of the AC? If anyone here know or have some info please step in.

You do need to retain the factory radio for Heating/AC controls. Theres a harness for it that you have to jury rig by pulling some connections, most people mount the radio in the trunk near the NAV brain.
