Are you using the skinny OEM jack that comes with the car.. I don't trust those things when it comes to holding a car up for long periods of time. I use a hydraulic jack, the ones with the 4 little wheels Plus the OEM one next to it if my wheel is gonna be off for a while (they're so skinny they fit next to the hydraulic jack) that way if one fails, the other is there to hold up.

You'll be fine with one jackstand at a time...
Hell, I knew one guy who put lifted his entire Hyundai Tiburon on two stands to rotate his tires...I dunno where he got the idea from but I was more surpised his car didn't fall over and he didn't get hurt.

Another thing you can do is put the tire you removed under the car, that way if the car did fall It won't completely pin you if you are under it.

By doing one side at a time you can always refer to the untouched side if you are having a problem with assembly.

As long as you are using a jackstand to support the side you are getting under you will be fine. Be sure to re-grease that worm gear on the siscor jack before putting it back. Oh and invest in a decent hydraulic jack for future use.
