Different tachs run off different signals. Some can use the ignition, some can use a crank angle sensor. Depends on the one you buy.
If you get an oil pressure gauge, make sure you buy an electrical one. You then run a tap into the oil system for the sensor (that you probably have to buy seperately) If you buy a mechanical one, you have to run a line from your oil system into the car, and then you run the risk of when it breaks, your knees are covered in oil (Like some old muscle cars).
Battery voltage/ampage is easy. Read the instructions it comes with, it will tell you to just splice it in from your ignition to the battery (or something like that)
You should already have a water gauge . . . and already have a sensor. If it doesnt (Cars since 1910 have had them!), you can buy one. Install a sensor and then run the wires to the gauge as per instructions included.
If you buy gauges new, they usually come with instructions.
