The Oem is 195/60 15inch, what happens if I use the 200's width and 55 aspect with my stock alloy 15 inch? It's a 2003 Corolla. What's the widest that I could go? Will it make any difference in terms of grip and performance?

I don't think you would notice the difference in grip between a 195 and a 205 what will make much more difference is the brand of tyre (or tire) you use. But yes 205's will fit. And if you go to 205 you should get 50 or 45 profile.

205/55-15 would be the step up size. I also agree, you will notice more of a difference with the tire's speed rating than size.
