there are these 4 wires going to the engine cover, should i take them off and then remove the engine cover? or should i leave it on? what would be considered a degreaser. like that orange stuff?

You can get engine degreaser at Walmart. It has directions on the can. I would cover the alternator and distibutor with a plastic bag so they don't get sprayed with degreaser and then water.

I'm not so sure all that covering is 100% necessary as what do you think happens when you drive in the rain. Lots of water inside the enginebay, yet no problems. Just dont use pressure on it, so that the water doesnt forcefully find its way into those devices.
