Engine Rebuild

I pulled the engine in the 91 (5SFE) and am going to rebuild. Is there anything that I need to watch for?
I have been looking at Ebay for gaskets and such, has anyone bought gaskets from there? If so were they of decent quality?
I hope to have this in the machine shop this week. Am hoping I can reuse the pistons, and just get new rings, polish the crank, with new bearings and if possible polish the cams.
Please let me know what if anything i am missing. I am not wanting to spend a lot but want to do it right.

There have been a few reports of cracks in the head btween the no 3 & 4 spark plug tubes. Have the shop check this when they do the head work.

There is very limited amount of material could be removed from the head gasket surface. The surface finish must be in the range between 30 to 50 microinch, use Toyota newer version head gasket and set of new head bolts. The brand of other gaskets is not important
