The A/C compressor does cycle on and off (assuming it is a Denso unit) by design. Could also be an indication of low refrigerant levels as well. Also, you could be running through areas that have a very high local ambient temperature. The A/C system was designed to cool air about 30 degree cooler than the ambient temp. You can buy a cheap thermometer and stick it in one of the vents and run the A/C - see what the temps look like.
You can double check the sightglass up by the radiator - look for the large aluminum cylinder. At the top, there is a little window. If the A/C is properly charged, there should be no bubbles flowing past the window. If the compressor just cycled, you might see some bubbles or foaming - that's OK, but it should eventually run clear.
Might be time to take it to a qualified shop to test for pressures on the high and low side. No sense trying to crazy with diagnostic, until you check the easy stuff first. If refrigerant level checks out OK - then you might have a potential wiring issue (magnetic clutch is cutting out prematurely) or a mechanical problem (orifice tube is clogged).
