- Which exhaust depends on personal tastes - I'd search for a sound clip to get an idea, then go by what fits your tastes/budget.
- Exhaust donut - should be able to pick one up at NAPA. $116 at the dealership - sure they looked up the right price? I picked up some for my Corolla, ran $8 for those donuts - unless we are talking about two different things here.
- Depends on your definition of "track". What is it going to do - road course, autocross, etc.? For mild track use, nothing less than the Hawk HP Plus, the Hawk HPS can cook too much on the track and start eating the rotor very quickly. There was an attempt to get a group buy for HP Plus pads some time ago on 9thgencorolla forum. Should be able to find some EBC and Porterfield pads for the Matrix. Personally, I'm not a big fan of EBC, but they have supposedly changed pad compounds. Porterfield are well known, also tend to run on the expensive side. Carbotech might have fitment for the Matrix. But like Performance Friction stuff, you can't run a different pad once the carbon composite touches the rotor. Have to turn them down or run a "cleaning" pad to get rid of the transfer layer - major PITA if you run separate street and track pads.
