Well....you don't actually gain that much room in the engine bay. If 'resale value' is not a concern (many buyers want a/c), then removal will improve the ease of all the modifications you will be doing. You will gain a bit of space in front of the radiator.
I doubt you'll try and remove the evaporator, until you are into the dash removal at some later date.
If you're doing it, do it. Pull the lines and the works, it's just clutter in the engine bay you don't need. I wish I had pulled EVERYTHING, but I didn't.

At the same time if you're going to mod a car, you can expect to get screwed in a deal. Mod'd cars (unless of a select breed) rarely make money when sold.

OK...OK...these cars aren't worth alot anymore anyway. Whoever buys it in the future won't really be considering the car for a daily comfort driver anyway. Yank that a/c !! ALL of it !! Except the evaporator, until you need to get to it for other reasons.
Then...you MUST mod the hell out of it !! These cars are such a blast to drive out on the road, and in the country, and especially the mtns.
is there any worrys with the freon still in the ac? i know my ac hasnt worked in many years lol, the replace the freon would cost more than the car i think so i have no need for my ac. but wasnt sure if theres still some freon in there if its a hazard to be ripping it all apart?
Not really a hazard. Just take a cap off the compressor, then use a pocket screwdriver (nail, whatever) to press in the shrader valve (like a tire uses)to release any freon that may still be in the system. I doubt there will be any. If a system is not used regularly, the seals dry out, and the freon leaks out.

one..my name isn't bob....i was only kidding in that thread...lol..
second..my ac was in perfect working condition..it was taken out to make room for my WG dump tube...if i had to do it all over again..i would have asked my tuner to work around the AC...but now everything has been completely removed...all lines too....in fact anything that wasn't no longer required has been taken out of my engine bay...much cleaner now and somewhat frees up some space..
