Here's your issue. I don't know of any real supplier that can keep Greddy Head Gaskets in stock which means they'll have to order it in. Which means, you're still waiting 6weeks+ while Greddy sends 'them' a gasket.
Now, Back to the question at hand.
Stock bore is 83mm, however, if you look at all of HKS's gaskets, they are offered in 86mm only. This is because it's a simple generic and you won't notice the compression loss from a few mm of horizontal space. Greddy, is more specific on it's sizes.
Stock HG Thickness is something like 1.2mm so the 1.0mm @ 83mm bore would increase compression slightly but would be the tightest fit for a stock bore. Personally, I'd order up the 84mm bore, 1.5mm HG. This guarantees that your engine doesn't become an interference engine (though with a 1.0mm that's still not likely, but definately more possible) and gives you a little slack on the bore.
Running any of the others should be considered when overboring or when you're lowering/increasing compression by other methods.
Summ'd Up: 1.5mm, 84mm Bore HG should treat you nicely but I suspect that supplier will still leave you waiting on Mr.Greddy Inc.
As for the crank, why buy a crankshaft there?
